Fisher, 31, said yesterday that with film roles keeping the pair busy, the wedding was still a long way off.
"We haven't set a date yet," she told Herald Sun LA correspondent Peta Hellard.
"It's been a very busy and exciting year."
Sporting a huge diamond engagement ring, the former Home and Away star said her small breakout role in 2005 comedy Wedding Crashers, had opened many doors for her.
"Professionally, I'm able to meet with people that I wouldn't have had the opportunity to get into a room with, and personally, I guess I've been given more free clothes," Fisher said.
Fisher, whose latest film role is a scheming stripper called Luvlee Lemons in drama The Lookout, said she still called Australia home despite spending the past nine years living in London and working in the US.
"It's terrible to admit, but the last time I was in Australia was for the press junket for Wedding Crashers two years ago," she said.
And good to hear that all Fisher's career idols are from the Hollywood gumleaf mafia.
"I love Cate Blanchett and Naomi Watts and Nicole Kidman - I love the Aussie girls," she said.
"I mean they can throw a mean barbecue and they can act - it's a great combination."
OK, this one I actually believe. They both have been really busy! I know the old saying/truth; you've just got to make time! But I can only imagine their work schedules as of late! At least they are realistic!
P.S. I wonder how she felt after seeing Borat? I mean personally, I'd be a little more than turned off... character or not!
